Pork: Baby-Back Ribs

Baby-back ribs come from the top of the rib cage above the loin area. Since this is the same area that pork chops are cut from, these ribs are lean and tender and similar in flavor to chops.

With a rich meaty flavor and a minimal amount of fat, baby-back ribs are great on the grill with a spicy rub, or basted with your favorite BBQ sauce. Since they are leaner than Spare ribs, they also require a shorter cooking time.
